Minority Report comes to mind as using a similar nice interface - there was a fairly good doco on the DVD that detailed how they worked out the various hand-gestures used to supposedly manipulate the items on their screen.

The more recent Star Trek movies and series have used evolved an interesting interface since Next Generation kicked off, although it's hard to tell at a glance if it's been though through or just *looks* like it's been thought throuugh.

Am interested to know what other movies you have in mind - I share a similar interest, although sadly my skills are purely technical rather than design based.
